What a Small Kitchen Actually Needs
Almost every commercial kitchen using vegetable or animal cooking oils needs a Class K wet chemical extinguisher, mounted within thirty feet of the cooking appliances. That is the one FDNY looks for first. Alongside it you need Class A coverage for ordinary combustibles — paper, cardboard, linens, seating areas — within a seventy-five foot travel distance, and Class B or clean-agent protection where flammable liquids or electrical equipment are present. A single ABC unit by the back door does not satisfy any of this on its own.
Placement Is Half the Requirement
An extinguisher only counts if someone can reach it during a fire. It must be unobstructed, mounted at proper height, visible, and signed. In a tight kitchen that usually means mounting on the path to the exit rather than beside the fryer, so staff are never reaching over flames to get to it. Extinguishers Do Not Replace Your Hood System
A Class K extinguisher is a backup to your hood suppression system, not a substitute for it. If you cook under a hood, both are required and both are inspected. We can service them on the same visit.

How many fire extinguishers does a small NYC restaurant need?
There is no flat number. It depends on square footage, layout and equipment. At minimum a commercial kitchen with fryers or oil-based cooking needs a Class K unit within thirty feet of the appliances, plus enough Class A coverage that no point in the space is more than seventy-five feet of travel from an extinguisher. Most small restaurants land at two to four units.
Is a regular ABC extinguisher enough for my kitchen?
No. Dry chemical is not rated for cooking oil fires and can splash burning grease. A Class K wet chemical extinguisher is required where vegetable or animal cooking oils are used. ABC units still serve a purpose for ordinary combustibles elsewhere in the space.
Where should the Class K extinguisher be mounted?

Do I still need extinguishers if I have a hood suppression system?
