What is the UL 300 testing standard?
UL 300 is a fire testing standard administered by Underwriters Laboratories (UL). In order for appliance companies to receive UL labels on their products, each individual model must be submitted to Underwriters Laboratories for testing. The appliances must meet specific requirements in order to be approved and certified as UL 300.
Why do you need to have a UL 300 compliant commercial cooking system in your commercial kitchen?
In the past (up through the mid-1990’s), most commercial cooking involved animal fat. Deep fryers, for instance, involved cooking temperatures that were inconsistent and thus, in-efficient. Dry-chemical systems were used to smother fires. Fast forward to today, and NYC restaurants are using vegetable oils in their commercial cooking operations. That’s because they heat up quicker, and hotter. That potentially puts more money in a restauranteur’s pocket.
