What Is Commercial Kitchen Ventilation?
Commercial kitchen ventilation, or CKV, is the process of moving of large quantities of air in and out of a kitchen. Commercial kitchen ventilation is part of a building’s heating, ventilating, and air-conditioning system, or HVAC.
Proper ventilation must achieve air balance. This means that for all the air leaving the kitchen, an equal amount of air must enter it. The air that enters is called “make-up air”. Make-up air equalizes air pressure, which is essential to commercial kitchen ventilation.
